Smoked Dijon Potato Salad

Smoky flavor, buttery potatoes full of fresh flavor. The perfect summer side dish.

When we first got our smoker, we knew we wanted to try some of the staples…ribs, pulled pork, salmon, but we also wanted to try side dishes. We had decided to make pulled pork, we knew that the pork had to rest for a while, which opened up the smoker for a side dish. I was craving a potato salad, but we already had coleslaw. In my opinion, you don’t need two creamy sides…but that didn’t mean we still couldn’t do a potato salad. That is when this delicious recipe came to life. It is a perfect blend of small colorful potatoes, herbs and a light oil dressing. Is it a classic potato salad? No. Is it delicious and a perfect addition to a meal? Yes.

  • Sheet Pan
  • Mixing and Serving Bowl
  • Gemstone Potatoes (mix of red, yellow and purple baby potatoes)
  • Olive Oil
  • Kosher Salt
  • Black Pepper
  • Rice Dijon Vinaigrette 
  • Fresh Herbs of your choice (basil, oregano, tarragon, sage, rosemary, thyme)

Prep

First things first, turn on the smoker to 225. I like to use apple or cherry wood to smoke the potatoes, but if I am smoking these with another meal, I simply use the wood that the other dish needed. While it is preheating, add the potatoes to a bowl and coat with olive oil, salt and pepper (make sure your potatoes are washed/dried first if needed). Toss everything together and spread on a sheet pan. When the smoker reaches 225, place the sheet pan on the smoker. Set the timer for 25 minutes.

Choose your herbs, I usually like to do a mixture, but it really depends on your flavor preferences and what you have on hand. I like to use a tablespoon each of basil, oregano and rosemary. Add the chopped herbs to a bowl and set aside.

Next, you will want to make the vinaigrette. It is quick. Mix together olive oil, the rice vinegar, dijon, a pinch of kosher salt and pepper. You will need ¼ cup of the vinaigrette, mix it up and add it to the herbs in the bowl.

When the 25 minutes are up, turn the smoker to 450 and give the potatoes a quick stir. Set the timer for an additional 20 minutes. Your potatoes should be done when the timer goes off, so you can remove these and dump them in the bowl with the herbs and dressing. Toss to coat and serve warm or cold.

Side Note: If you don’t have a smoker, you can certainly do the same temp with the oven or grill, just note that you will not get the smoky flavor. Trust me, it will still be delicious.

Smoked Dijon Potato Salad
Intolerances: Fructose, Gluten, Dairy, Soy

Serves: 4-6
Prep Time: 5 minutes Total Time: 50 minutes

1 lb Gemstone/fingerling/rainbow potatoes
1½ Tsp Olive Oil
3 Tbsp chopped fresh herbs (basil, oregano, tarragon, sage – use a mix or just one based on tolerance and what you have on hand)
1 tsp Kosher Salt 
¼ tsp Cracked Black Pepper
¼ cup Rice Dijon Vinaigrette

  1. Toss potatoes with olive oil, kosher salt and black pepper. Spread the potatoes on a sheet pan and place in the smoker for 25 minutes at 225. Increase the smoker temp to 450 and smoke another 20 minutes.
  2. Remove the potatoes from the smoker and add them to a bowl. Garnish with your herbs and toss with the rice dijon vinaigrette. Serve warm or cold.

 Side note: No smoker, no problem. You can use the same temps and times in the oven, simply roast.
